The Best Cheesy Crab Dip

This is the dip that disappears first at every party I bring it to. Warm, creamy, packed with sweet lump crab and just enough spinach to feel like you're getting away with something. It's bubbly and golden on top, ridiculously rich underneath, and works in either the oven or the crockpot depending on how many other things you're juggling.

Why this works

  • Three cheeses, three jobs. Cream cheese is the body, mozzarella melts into stretchy strings, parmesan-style cheese adds a salty, savory edge on top.
  • Crème fraîche instead of sour cream. Slightly tangier, slightly richer, and doesn't break when heated. Sour cream works too, but crème fraîche is what gives the dip that grown-up depth.
  • Lump crab, not imitation. It costs a few dollars more, but real lump crab has actual sweet meaty bites you can taste through the cheese. Imitation crab dissolves.

Pro tips

  • Squeeze the spinach dry. If you're using frozen spinach, thaw it and squeeze out all the water in a clean towel. Wet spinach turns the dip soupy.
  • Fold the crab in last. Stirring too aggressively breaks up the lumps. You want big chunks of crab in every bite.
  • Make ahead. Mix everything in your baking dish, cover, and refrigerate up to 24 hours. Bake straight from the fridge, just add 5 to 10 minutes to the cook time.
  • Serve in a crockpot. If you're feeding a crowd, transfer the baked dip to a small crockpot on warm so it stays melty for hours.

Can I use canned crab?
Yes, the canned lump crab works (look for refrigerated, pasteurized lump crab in cans near the seafood counter). Avoid imitation crab sticks, they have a different texture.

What do I serve this with?
Buttery crackers like Ritz, toasted baguette slices, sturdy tortilla chips, or crudités if you want to lighten things up.

Can I make it without spinach?
Absolutely, just leave it out. The dip works without the green and you'll get a slightly more concentrated crab flavor.

Ingredients
  • 8 ounce package cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/2 cup Crème fraîche (sour cream)
  • 1/2 teaspoon Worcestershire sauce
  • 1 tablespoon hot sauce
  • 1 garlic clove, minced
  • 1 teaspoon Lawry's Seasoned Salt
  • 1 teaspoon paprika 
  • 1/2 cup white cheddar cheese, shredded 
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup Parmigiano Reggiano, Grated 
  • 4 ounces Spinach, chopped (frozen or fresh)
  • 1 (8 ounce) can All-Natural Lump Crab Meat (Pasteurized)
  • 1 tablespoon fresh lemon juice
  • fresh ground black pepper, to taste
For Serving:
  • Ritz crackers, baguette slices, or tortilla chips
  • 1 teaspoon of finely chopped chives 
  • 1 tablespoon green onions
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a medium mixing bowl combine cream cheese, mayonnaise, crème fraîche, worcestershire sauce, and hot sauce.
  3. Next, add the remaining ingredients and stir again until well combined. 
  4. Transfer to a small baking dish and top with a little more Parmigiano-Reggiano and Mozzarella cheese.
  5. Transfer dish to preheated oven and bake for 25 to 30 minutes until bubbly and browned.
  6. Remove from oven and top with Chives and Green Onions 
  7. Serve with crackers, baguette slices, or tortilla chips.

NOTES:

**I usually make this dish in the oven then transfer it to a small crock pot.

Make-Ahead Instructions:

Once you transfer the mixture to a serving dish, cover the dish with plastic wrap and refrigerate overnight. When ready to bake, remove from the refrigerator and allow to sit out for 15 or 20 minutes before baking. You may need to increase the baking time a bit to compensate if the dip is very cold when going into the oven.

Slow Cooker Instructions

Add all the ingredients to a small slow cooker, combine everything well, and set the slow cooker on low for 2 hours. Once the cream cheese melts, Stir the dip and then let it cook for an additional 15 to 20 minutes

Leftovers:  Do not freeze. Store for up to 3 days in the refrigerator. Reheat in the microwave or in the oven.
