Walking Tacos 

Walking Tacos made with ground Chicken is an excellent way to feed your family on a budget, but in a healthier way. Any ground meat can be turned into a walking taco recipe everyone will love by adding cheese-flavored nacho chips, sour cream, taco seasoning, cheese, and any of your favorite topping in your fridge. 

Weeknight dinners are easy with Walking Tacos/Walking Taco Bake. Many people enjoy this recipe because of its unique flavors and textures. It's the perfect comfort food and can be made with whatever ingredients you have on hand.

The creamy meat base is paired with taco seasoning mix, crunchy nacho chips, and grated cheese to create a winning combination. Similar to my Jack Fruit Nachos, this recipe is simple to make, and the result is a delicious meal that will keep everyone smiling! 

Furthermore, it has a lot of protein as well. The best part? It's so easy! You do not have to make individual servings, you can also layer the ingredients in a baking dish and pop it in the oven. You'll have dinner on the table in no time.

What you’ll need:

Walking tacos are a delicious meal that's easy to make and perfect for any time of the year. Moreover, it's a great way of using up any left over taco meat or any meat that you can make nachos with. If you're looking for something new to do with your leftovers, this is it!

Here's the basics of what you'll need to prepare a walking tacos or walking taco bake

  • Ground Chicken 93% Lean (my choice) or Ground Turkey/Beef– I use lean meat. It has a decent amount of flavor that is not overly greasy.
  • Onion – Adds a sweet flavor to the meat. I prefer to use a small yellow onion, but feel free to use whatever onion you have — you can even use onion powder if you do not have an onion on hand. 
  • Taco seasoning mix—a secret ingredient that brings that irresistible Mexican flavor. I use the McCormick Chicken Taco Seasoning Mix or McCormick Chipotle Taco Seasoning
  • Sour cream – gives a creamy texture and a tangy flavor. I love Mexican Style Cream — Cream Mexicana by La Vaquita is my favorite
  • Doritos (nacho cheese flavored chips or Spicy Nachos) (Frito corn chips go well, too) – It gives every bite the right amount of crunch.
  • Cheese – Adds a creamy texture and makes your dish irresistibly delicious. I love to top my walking tacos with Culinary Cowgirls - Queso, All-Natural, Queso Blanco as well — it is legit the best Queso I have ever had. I buy it at my local H-E-B.
  • Rotel – Adding Ro-Tel to the casserole will give it a zesty and spicy kick. I love to use  Fire Roasted Diced Tomatoes and Chilies, but you can use any Rotel you like.
  • Red Enchilada Sauce – Adds umami flavors to your casserole. 

OPTIONAL TOPPINGS:

If you're looking to add a bit of flair to your walking tacos / waling tacos bake, I recommend topping it with some of the following:

  • Shredded lettuce
  • Diced tomato
  • Sliced jalapeños
  • Cilantro
  • Chives
  • Shredded Lettuce

How do you make Walking Tacos?

There's nothing complicated about making Walking Tacos! Prepare the ground meat with chopped yellow onions until the meat is browned and the onions are soft. Pour in the enchiladas sauce, Rotel, sour cream, and taco seasoning, and constantly stir until combined well. Place the ground meat within the Doritos bag and top with cheese and your favorite toppings. 

You can also make this recipe as casserole— it is easy to prepare! First, cook the ground beef with chopped onions until the meat is browned and the onions are soft. Next, add the enchilada sauce, Rotel, sour cream, and taco seasoning, stirring constantly. 

Remove the meat mixture from the heat and top it with broken Doritos. Top the nachos with cheese. In a preheated oven, bake for 15-20 minutes until the cheese has completely melted. If you wish, you can add any additional optional toppings before serving.

Walking Taco Recipe

Walking tacos are a delicious way to feed your family. It's made with ground beef, cheese, sour cream, and Rotel, which means it's perfect for the kids. This recipe calls for taco seasoning mix and Doritos cheese-flavored nachos. Without any further due, let’s get into the recipe. 

Ingredients

  • 2 pounds of Ground Meat (I prefer Ground Turkey or Chicken)
  • 1 small yellow onion, diced (1cup)
  • 1 packet Chicken Taco seasoning mix (if making with ground beef use Mild Taco Seasoning)
  • ½ cup Sour cream
  • 10  Doritos nacho bags cheese flavor, broken but not crushed
  • 8 ounces freshly grated mild cheese
  • 1 10 ounce can Rotel  (use your favorite brand)
  • 1 can 10 ounce Enchilada sauce
  • 1 Goya Sazon Culantro y Achiote Packet
  • Jalapeños, Queso, Shredded Lettuce, Cilantro, Chives, taco sauce, salsa, or whatever toppings you prefer

Instructions:

  • Cook the ground meat on medium-high heat with the minced onions in the skillet (cast iron if making the Taco Bake) until the meat is brown in color, and the onions are transparent and soft. Drain the grease if using ground beef,  and return to the stovetop. 
  • Add in the Goya Sazon Culantro y Achiote Packet. Stir in the Rotel, sour cream, enchiladas sauce ( you do not have to use the entire can), and taco seasoning. Stir continuously until well combined.
  • After the meat mixture is cooked, remove it from the heat and add a nice helping of the meat to each Doritos bag. 
  • Top the with your favorite toppings

INGREDIENTS SUBSTITUTIONS

  • Enchilada sauce. The enchilada sauce in this recipe can be substituted with salsa.
  • Ground Chicken. Use ground beef for a richer and flavorful version.
  • Sour cream. Greek yogurt and cream cheese can be used instead of sour cream.
  • Doritos. I prefer using cheese-flavored or Spicy Doritos nachos for this recipe. Alternatively, you can use Fritos corn chips, tortilla chips, or any of your favorite flavors.

**How to a make a walking taco casserole (without a cast-iron skillet)

  • Cook the ground beef and onions in a regular kitchen skillet until the meat turns brown. 
  • Discard the grease and stir in the rest of the ingredients until creamy and well combined.
  • Assemble in an 8x8 greased baking dish. 
  • Bake until cheese is melted and bubbling, then serve with any toppings of your choice. Enjoy!

Which cheese melts fast, shredded or non-shredded?

If you're looking for convenience, try buying pre-shredded cheese. It will save you time and energy not to grate your cheddar block. However, if you're planning on making the walking taco casserole or lasagna or some other dish where melted cheesy goodness is a must-have ingredient (and rightly so), then you'll probably want freshly grated cheese instead of pre-shredded cheese.

Pre-shredded cheese contains preservatives that keep it from going bad in the store; however, it won't get soft and melty as quickly as freshly grated cheese. Consider Colby jack, cheddar, or Monterey jack for this recipe.

Can you make a walking tacos ahead of time?

Making this walking tacos recipe in advance is a great idea to treat a large crowd. Refrigerate the creamy meat mixture for up to two days in an airtight container. After serving, reheat the creamy meat mixture on the stovetop until heated. Assuming that you are assembling the mix in a Doritos bag. Follow the recipe for assembling the taco bags. 

How to reheat Walking Tacos Bake —

You can reheat it by placing a portion of it in the microwave on a plate. The chips will be soft regardless of how you reheat them, so why not choose the fastest method? To get the crispiest bites possible, add additional chips when serving. If you made the standard walking tacos, you would just reheat the portion of meat you want for your individual serving. 

Can I make walking tacos in the slow cooker?

Yes, of course! You can make the walking tacos mixture or casserole in a slow cooker. Follow these steps to make this recipe in a slow cooker:

  1. Cook the ground beef and onions in a skillet over medium-high heat until the meat turns brown.
  2. Transfer the beef and onions to a slow cooker.
  3. Add sour cream, Rotel, sauce, and seasonings.
  4. Let it simmer for 2-3 hours on high or 4-5 hours on low.
  5. Top cooked meat with Doritos and cheese.
  6. Cook for another 30 minutes. Serve warm!
