Quick Oven-Roasted Turkey, Bacon & Ham Sandwiches

This is the lunch I make when I want a deli sandwich that tastes way better than a deli sandwich. A whole loaf of ciabatta, brushed with a quick homemade Italian dressing, toasted, then layered with deli turkey, ham, smoked cheddar, crisp bacon, and the freshest vegetables you have on hand. You bake it just long enough to melt the cheese, slice it into thick portions, and watch it disappear in ten minutes.

Why this works

  • Loaf, not individual rolls. Building one big sandwich and slicing it after is faster, looks more impressive on a platter, and gives you better bread-to-filling ratio than fiddling with separate hoagies.
  • Homemade Italian dressing on the bread. Forget mayonnaise as the only moisture. A brush of garlicky olive oil and vinegar soaks into the toasted crumb and seasons every bite.
  • Bake to melt, then top fresh. Heating the meats and cheese together melts everything into one cohesive layer. Adding lettuce, tomato, and cucumber AFTER baking keeps them crisp and bright.

Pro tips

  • Cook the bacon in the same oven while the bread toasts. Saves washing a pan and frees up your hands.
  • Use thinly sliced deli meat. Thicker slices make the sandwich harder to eat. Most deli counters will go as thin as you ask.
  • Slice cucumbers paper thin. A mandoline or a Y-peeler helps. Thick cucumber slices make the sandwich slide apart.
  • Make the dressing in a squeeze bottle. Shake, brush, store the rest in the fridge for the next batch. The dressing keeps a week.

FAQ

Can I make this ahead?
Build the sandwich without the lettuce, tomato, and cucumber up to a few hours ahead and refrigerate. Bake when ready, then top with the veg right before serving so nothing goes soggy.

Best bread for this?
Ciabatta is my favorite for the crusty-chewy contrast. Sub bolillo, French baguette, or a soft sub roll if you prefer something less crusty.

Can I add other meats or cheeses?
Absolutely. Salami, sopressata, prosciutto, provolone, fresh mozzarella, gruyère, all work. This is a use-what-you-have sandwich.

How do I make it vegetarian?
Sub roasted red peppers, marinated artichoke hearts, fresh mozzarella, and basil leaves for the meats. Same dressing, same method, every bit as good.

Storage

Pre-assembled sandwiches keep best dry. Wrap leftovers tightly in foil, refrigerate, and reheat in a 350°F oven for 8 to 10 minutes. The vegetables won't be quite as crisp but the sandwich still tastes excellent the next day. Best within 24 hours.

Ingredients
  • 1 Ciabatta loaf or 4 Sub/Hoagie Rolls
  • 1/2 Pound Thinly Sliced Black Forest Ham
  • 1/2 Pound Thinly Sliced Oven Roasted Turkey
  • 3-4 Tablespoons Mayo 
  • 1/4 Pound Thinly Sliced Colby Jack or Smoked Cheddar  Cheese
  • 2 Cups Shredded Lettuce or Arugula
  • 1 Thinly Sliced medium size Tomato
  • 1/2 thinly sliced English Cucumber 
  • 4 slices of Hickory smoked bacon, cooked
Homemade Italian Dressing
  • 3/4 Cup Basil or Garlic  Infused Olive Oil
  • 1/4 Cup Red Wine Vinegar
  • 2 Teaspoons of Italian seasonings
  • Salt and Pepper (to taste)

Add ingredients to a salad dressing bottle and shake to combine. 

Instructions
  1. Preheat the oven to 375F
  2. Cut the ciabatta loaf in half (or you can use 4 hoagie rolls, split and toasted)
  3. Lightly brush the insides of the ciabatta loaf with the homemade Italian dressing. Toast for 5 mins. Set aside
  4. While the toasted loaf or rolls are cooling, cut up your toppings & cook bacon according to package instructions. 
  5. Spread a thin layer of Mayo on the bottom half of loaf. Now, layer the turkey, ham, and cheese.
  6. Place the loaf on sheet pan lined aluminum foil without the top loaf and bake until cheese is melted (12-15 mins) or can place 4 inches from broiler for a few minutes to melt cheese. 
  7. Top the toasted loaf or rolls with arugula or lettuce, tomato slices, cucumber slices and cooked bacon.
  8. When ready to serve, slice the loaf into sandwiches. Serve warm.

*Note: you can use hoagie rolls, instead of lining the pan with aluminum foil you would wrap each individual sandwich in aluminum foil and bake them for 12-15 mins or until the cheese is melted
