Creamy Tuscan Shrimp and Chicken Sausage Pasta Recipe

This dish is made with Italian penne pasta, smoked chicken andouille sausage, and shrimps seasoned in flavorful Blackened seasoning. It's served in a creamy sauce made from sun-dried tomatoes, spinach, heavy cream, and parmesan cheese to create a decadent meal that you won't soon forget.

This recipe is absolutely delicious and quick to prepare. It's perfect for a busy weeknight dinner, but it also makes an excellent dish to serve guests when you want something comforting yet elegant.

Shrimp and Chicken Sausage

I prefer to use a combination of shrimp and chicken sausage for this recipe, but feel free to substitute your favorite protein! 

The pairing of shrimp and chicken sausage is an excellent choice for this recipe. The protein-rich sausages are the perfect addition to a creamy pasta dish, while the shrimp adds a delightful texture that helps balance out the richness of the sauce.

You can use just about any sausage you would like. I have used smoked chicken andouille sausage. Just make sure that the sausage is fully cooked before adding it to the sauce.

To prepare chicken Sausage, you’ll need:

  • smoked chicken andouille sausage, sliced
  • 2 tablespoons unsalted butter

Heat a large, heavy bottom skillet over medium heat. Melt two tablespoons of the butter, add in sliced chicken sausage, and cook for about 3 minutes on each side or until lightly browned. Transfer to a bowl; Set aside.

To prepare shrimp, you’ll need

  • colossal shrimp, peeled and deveined
  • Blackened Seasoning
  • 2 tablespoons unsalted butter 
  • finely chopped garlic

To prepare shrimp for creamy Tuscan pasta, melt 2 tablespoons of butter using the same skillet which you have used to prepare chicken sausage. Add in garlic and cook until fragrant, about 1 minute. Add shrimp to the pan and toss with blackened seasoning, cooking 2-minutes on each side or until just cooked through and pink. Transfer to a bowl; Set aside.

Cream Sauce

The rich, creamy sauce is made from sun-dried tomatoes, spinach, heavy cream, Italian herbs, and parmesan cheese and is served over cooked pasta to create a decadent meal that you won’t forget. The Italian herbs give the sauce a wonderful flavor, and the spinach and sun-dried tomatoes add color and nutrition.

To make the cream sauce, you’ll need:

  • white sherry cooking wine
  • sun-dried tomato strips
  • heavy cream – enhances the flavor and richness
  • Salt and pepper, to taste
  • fresh baby spinach leaves, chopped
  • fresh grated Parmesan cheese
  • cornstarch slurry (1tsp cornstarch mixed with 1 Tbsp of water)
  • dried Italian herbs
  • fresh parsley, chopped

Stir the white wine into the pan and reduce it to half over medium-high heat. Add the sliced sun-dried tomatoes and let them simmer for 1-2 minutes. Pour the heavy cream into the pan, reduce heat to low-medium, and simmer, stirring occasionally. Add salt and pepper to taste. 

Stir in the spinach leaves and cook until they wilt, then add the parmesan cheese. Simmer sauce for one more minute until cheese melts. (You can thicken the sauce by adding more milk and cornstarch to the center of the pan, stirring quickly until it thickens.)

Pasta

You can use any pasta that you like for this recipe—I used penne pasta because I think it goes well with both the creaminess of the sauce and the texture of the shrimp and chicken sausage. 

To make pasta, you’ll need

  • penne pasta - cooked and drained
  • water

Fill a large pot with water and bring to a boil over high heat. Add pasta and cook according to package instructions until al dente (10-12 minutes). Drain using a colander or strainer.

Serving Creamy Tuscan Shrimp and Chicken Sausage Pasta

Add the shrimp and chicken sausage to the cream sauce, sprinkle with the herbs and parsley and stir through. Serve over cooked pasta and toss well to combine all ingredients. Serve with freshly grated parmesan cheese.

Ingredients

Shrimp and Chicken Sausage:

  • 4 tablespoons unsalted butter (divided into 2 tablespoons)
  • 4 cloves garlic, finely diced
  • ½ pound colossal shrimp, peeled and deveined
  • 12 ounces smoked chicken andouille sausage, sliced
  • 1 Tablespoon Blackened Seasoning

Cream Sauce and Pasta:

  • 1/2 cup white sherry cooking wine
  • 3 ounces sun-dried tomato strips in oil, drained
  • 1 3/4 cups heavy cream
  • Salt and pepper to taste
  • 3 cups fresh baby spinach leaves, chopped
  • 2/3 cup fresh grated Parmesan cheese
  • 1 teaspoon cornstarch mixed with 1 tablespoon of water
  • 2 teaspoons dried Italian herbs
  • 1 tablespoon fresh parsley, chopped
  • 8 ounces penne pasta - cooked and drained

Garnish: shaved/grated parmesan cheese, chopped parsley, lemon zest, and red pepper flakes

Instructions
  1. Heat a large heavy bottom skillet over medium-high heat. Melt 2 tablespoons of the butter and then add in sliced chicken sausage and cook for about 3 minutes on each side. Transfer to a bowl; set aside.
  2. Now, melt the additional 2 tablespoons of butter using the same pan. Then, add in the garlic, and fry until fragrant. Next, add in the shrimp and season with blackened seasoning; cook 2-minutes on each side or until just cooked through and pink. Transfer to a bowl; set aside.
  3. Pour in the white wine, and allow to reduce to half while scraping any bits off of the bottom of the pan. Add the sliced sun-dried tomatoes and fry for 1-2 minutes.
  4. Reduce heat to low-medium heat, add the heavy cream and bring to a simmer, while occasionally stirring. Season to taste with salt and pepper
  5. Add in the spinach leaves and cook until wilted, and then add in the parmesan cheese. Allow sauce to simmer for a further minute until cheese melts through the sauce. (For a thicker sauce, add the milk/cornstarch mixture to the center of the pan, and continue to simmer while quickly stirring the mixture through until the sauce thickens.)
  6. Add the shrimp and chicken back into the pan; sprinkle with the herbs and parsley, and stir to combine.
  7. Serve over cooked pasta (reserve a cup of pasta water to add to the cream sauce, this helps the sauce stick to the pasta)
