  2. Strain the watermelon-ginger mixture through a fine mesh strainer into a pitcher or container to remove any pulp or ginger fibers.
  3. In a separate bowl, mix the freshly squeezed lemon juice and honey (if desired) until well combined.
  4. Pour the lemon-honey mixture into the pitcher with the watermelon-ginger juice. Stir well to combine the flavors.
  5. Fill serving glasses with ice cubes. Pour the watermelon ginger mixture into the glasses, filling them about halfway.
  6. Top off each glass with soda water, pouring it slowly to create a bubbly effect. Leave some space at the top of each glass for garnishes and stirring.
